FAQ

Honey Notes

Does Honey Go Bad?

Crystallization is a natural process and doesn't affect the quality or flavor. Real honey is made up of glucose & fructose. Honey varietals higher in fructose are slow to crystallize, like our Black Button Sage Honey. While Honey varietals high in glucose crystallize faster, like our Meadowfoam Honey. Honey is least likely to crystallize if stored at room temperature. But if it does, simply place the glass jar, upright, in a pot of hot water, give it a stir with a knife, and it will return.

What Do I Do With Honeycomb?

It's said that bees consume 8lbs of honey to create 1 lb of wax. Honeycomb is 100% edible and is rich in vitamin A. Store it at room temperature in it's jewel box and like honey never refridgerate it.

Why Can't Infants Eat Honey?

Botulinum endospores are found in the natural environment of dirt and dust, and the spores can contaminate honeys. The developed digestive system of older children and adults destroy the spores. Infants, however, can contract botulism from honey as well as other foods that have the spores. Infantile botulism cases rarely trace back to honey, but because the spores can be found in some honey, it is best to avoid giving it to infants.

Why Do You Call Them Varietals?

Each of our honeys are made when our bees visit a specific type of flower. The hives are physically moved to the Sage Field, the Orange Grove and the Meadowfoam Field in order to collect that nectar source. That's how we get a single source honey varietal. Our Wildflower is a multi-floral honey since the bees forage on multiple different types of flowers. Our Wildflower is a blend or "meritage" if you will, all inside the hive.
